National Vegetarian Week


Happy Vegetarian Week everyone!

What a perfect week to start my new blog. I will focus mainly on veggie recipes I have been preparing, but I will also talk about fun stuff going on in the Boston area and the best restaurants for veggie food.

Peppers stuffed with Polenta

I made this recipe last night. If you like polenta you will enjoy this dish. Easy preperation and few ingredients needed. This recipe came from Simple Suppers (Moosewood)

4 bell peppers (any color combination)
olive oil
salt

Filling
4 cups of water
red pepper flakes
salt
1 cup cornmeal
2 tablespoons butter
2 cups of shredded cheddar cheese


Pre-heat the oven to 450 degrees. Cut the bell pepper in half lengthwise keeping the stems on so they will hold their shape. Brush peppers with olive oil and salt. Place the peppers on a baking sheet open side up. Cook for 15 minutes.

Meanwhile, boil 4 cups of water, red pepper flakes, and salt. Add 1 cup of cornmeal. Turn down to medium heat and stir until a thick paste is created, about 5 minutes. Add 1 cup and half cheese and butter. Remove from heat.

Fill pepper halves with the cornmeal mixture and top with the remaining cheese. Place in the oven for 5 minutes.
